I have loved fantasy movies ever since I cowered in the backseat of the family car at the drive-in, when the giant Rocs threatened poor Sinbad the Sailor.
For a time, Disney has a lock on the fantasy franchise, with animated features taken directly from Fairy Tales, but given the unique Disney spin. For instance, the Brothers Grimm probably didn't envision Cinderella's three fairy godmothers to be funny little old ladies who were tiny with little mosquito wings. In those days, the fantasy movies were mainly for kids - if they weren't animated (which most were), the special effects were so cheesy that it was difficult for adults to suspend disbelief.
Those days are long gone, of course, and special effects can now bring you highly detailed, believable dragons, magical spells taking effect, whole new species like Orcs; a fantasy movie can now transport you to another realm.
Some might quibble at the inclusion of the Indiana Jones movies herein. Come On! - the Lost Ark? that melted the faces of the bad guys? the Holy Grail? An ancient Templar still alive after centuries? Pure fantasy.
Fantasy movies can run the gamut, from the traditional fairy tales, or modern fairy tales such as The Princess Bride, to their modern day equivalent the superheroes like Batman and Robin, to creep supernatural horror such as you would found in The Dracula Movies.
